MINTED CRENSHAW MELON SALAD
½ Crenshaw Melon Cubed                                          1tbsp can sugar
2 cups Watermelon Cubed                                          2tbsp lime juice
10 fresh mint leaves                                                                      2 fresh basil leaves
 
Place Crenshaw and Watermelon cubes in mixing bowl. In a mortar and pestle, grind mint, basil and sugar. When herbs have been pressed into a green paste, add lime juice to dissolve sugar. Pour over melons and toss. Serve immediately.
